This study investigated the anti-atherosclerotic effects of adding buckwheat sprouts to the diet of lard-fed rats. Rats were divided into four groups: control, high-fat, buckwheat, and high-fat plus buckwheat. The findings showed that buckwheat sprouts supplementation reduced weight gain, improved antioxidant protection, and enhanced lipid profiles in the high-fat group. These results suggest that buckwheat sprouts could have a protective, anti-atherosclerotic effect and provide a beneficial health impact for populations consuming a Western diet high in saturated fats. Limitations include the use of an animal model, and further research is needed to confirm the effects in humans.
